You will be a lucky passerby if you come across bread made under consciousness of ingredients that may cause allergic reactions in Asian countries, such as egg, milk, and so on. Back in my country and also in Europe, I found many bakeries which are very mindful on consumers with allergic conditions where you can find varieties of bread without egg, milk, and butter…

So far, here in Phnom Penh, most of all (? all??) bakeries are not a special bakery for it.

There are, however, some customers who asked me if SANCHA provides bread without egg and milk (and sometimes butter) for their kids who cannot consume those. While my answer always went as “bagel and Campagne”, I knew it was not the answer because they might want one FOR KIDS. It should be sweet and soft, I guess…..

I would like to just let you know that my bakery cannot be the special bakery. So there is the limitation of what I can do.

But at the same time, I want to do as much as I can for those because bread should be fair to all… I hope.

What I am trying to create is Soft and Sweet Pain de Mie without egg, milk, and butter. With flour, salt, sugar, yeast, water…. And coconut milk. What brings good flavor and rich tastes, and could substitute egg, milk and butter. I hope it will see the light in the near future.
